Day 4: Sorption isotherms

• Sorption behaviour of fruit, vegetable and stable crops
• PC-practical: Establishing of sorption-isotherms (Excel)

Day 5: Drying kinetics

• Drying kinetics and quality change of fruit, vegetable and stable crops
• PC-practical: Establishing of drying curves (Excel)

Forenoon in class, afternoon self-study, laptop will be required for PC-practicals
